This week there has been no doubt that autumn has arrived here with us! ☂️🌬️ Woolen clothes have been found for the kids, there was a hat on the farm trip this weekend, and a nice fire in the stove! Colder wind and breeze, rain and sun alternating, and bonus with many nice rainbows! 🌈

I keep a close eye on the weather and make sure to get out into the garden when it has dried out, and I am still harvesting fresh new shoots of super nettle, different types of mint, lemon balm, and colorful Calendula 🌼 By the way, we had a wonderful hike in the woods this weekend where I got to survey a lot of juniper and not least a lot of ripe juniper berries that will be picked and dried as spices for future game stews. 🍃🍁 On such hikes, it's also fun to break off some juniper branches on the way home, boil a pan with juniper leaves and use them for steaming or add them to a bathtub or foot bath for some self-care 🛁

Warm and rich pumpkin soup, outside in the crisp autumn air!

Were you tempted and want to try it? Here's the recipe:
- 800 g Hokkaido pumpkin (or your favorite pumpkin)
- 2 cups sweet potatoes
- 1 red onion
- 1 tbsp ginger, finely grated
- 3 cloves garlic
- 1 red chili
- 8 dl chicken stock
- 4 dl coconut milk
- 1 piece of lime
- 2 tablespoons sunflower oil salt and pepper, to taste coriander
- 2 tablespoons coconut flakes
2. Peel and dice the sweet potatoes. Chop the onion, garlic and chili (remove the seeds if you want a milder chili flavor).
3. Heat a good drizzle of extra virgin olive oil in a medium saucepan or pan. Sauté the onion until it starts to soften without changing color.
4. Add the ginger, chili and garlic. Continue to fry for a couple of minutes, stirring. Add the pumpkin and sweet potato and continue to fry for a minute.
5. Pour in the stock/. Bring to a boil and simmer until the vegetables are completely tender, about 30 minutes.
6. Use a hand blender and blend the soup until smooth and even, then add the coconut milk.
7. Bring the soup to a boil again and season with lime juice, salt and ground pepper. Serve with a sprinkle of chopped coriander, coconut and, if you can find it, pomegranate seeds.
